Our traditional bourbon is made from dent corn, danko rye and distillers malt. Our rich, fatty dent corn, yielding beautiful oils and floral aromas. Our danko rye is bready and fruity, and provides the precursor molecules that our yeasts transform into banana and spice notes. The malt provides all the enzymes we need, along with a biscuity undertone. We use a special blend of ale and whisky yeasts to realize the full flavor potential of the rye and compliment the flavors of the mash. We also use backset and encourage the growth of ambient microbes to create additional esters and complexity during our long ferment.
