Our sour-mashed, cherrywood-smoked, single malt empire rye is a truly unique whisky. Single malt rye is a very rare beast in its own right, but to our knowledge we are the only distillery using cherry-wood smoked rye. Our danko rye is custom malted and lightly smoked by Valley Malt, and comprises 100% of our mashbill. We combine rum, ale and whisky yeasts with ambient microbes for a tremendous amount of flavor and complexity to compliment the rye malt. Tasting notes are dark fruit, sweet smoke, bananas foster, tropical fruit and caraway.
