Wheated bourbon has been very popular in recent years, and as a result there has been a shortage of mature stock. Consequently, many distilleries increased production and are currently aging the spirit. Wheated bourbons tend to be on the lighter, sweeter and creamier side, but ours is different. While it is certainly creamy, thanks to our lovely soft white winter wheat, the roasted oats add weight and body, along with notes of nuts and chocolate. Our robust, fatty dent corn gives rich oils and floral aromas and our malt provides all the enzymes we need, along with a biscuity undertone. We use a special blend of ale and whisky yeasts, combined with ambient microbes and backset, to create rich umami and berry notes during our long ferment.
